Sunbutter Energy Bars

These bars are so filling and will keep you going from that 2 p.m. slump until dinnertime. Protein packed and full of and they’re DELICIOUS.

Okay, so these look more complicated than they are—there’s a lot of ingredients but it’s super simple. The original recipe called for almonds, but I used pepitas, and if you choose to use the pepitas make sure they’re unsalted or omit the salt in the recipe. Oh, and you will be tempted to eat these before they cool completely, but let them cool off all the way before you cut them up.

Ingredients

1 cup quick oats

1 cup pepitas

1 cup any flavor Ry’s Sunbutter

3/4 cup cooked quinoa

1/2 cup honey

1 tsp vanilla

1 tsp cinnamon

1 tsp salt

dried fruit to taste— I used 1/4 cup dried cranberries

Instructions

Preheat oven to 350

Line a 9 inch baking dish with parchment paper

Mix all ingredients, combine until smooth.

Spoon evenly into baking dish.

Bake 20-25 minutes

Cool on cooling rack, then cut into bars.
