Double Butter Delight cookies

I would make a long post about why I’m making cookies, but the truth is I just wanted cookies, and these are really easy to make. This is for a small batch of 18 cookies, because I really do NOT need three dozen cookies hanging around my house. I mean, I could just give them away, but I won’t, so there’s that.

Tip: when you add the Cocoa, just fold it in and then lightly mix with a knife so you get a nice swirl in the cookie. Otherwise it’s just brown. Tasty, but not the look we’re going for here.

Ingredients

1/2 cup softened butter

1/3 cup Vanilla Sea Salt Sunbutter

1/2 cup sugar

1/2 cup brown sugar (dark or light)

1 egg

1 tsp vanilla

1 1/3 cup all purpose flour

1 tsp baking soda

1/4 tsp salt

1/4 tsp baking powder

1/4 cup Cocoa Sunbutter

Instructions

Cream together butter, Vanilla Sea Salt Sunbutter, and sugars in a mixing bowl till creamy. Beat in eggs and vanilla.

In a small bowl, whisk together flour, soda, salt, and baking powder, then add to the wet ingredients. Stir till thoroughly blended.

Carefully add dollops of Cocoa Sunbutter to the dough, folding it over gently so you can space them throughout the dough. Then use a knife to swirl the Cocoa into the dough. Remember, we want that pretty pattern!

Cover and chill the dough for about 15-30 minutes, but it’s fine if you forgot about it because you had to go run errands and hit Starbucks on the way home.

Drop spoonfuls of dough onto lightly greased or silicone lined cookie sheets. Bake at 350° for about 10 minutes.
