Sunbutter Caramel

I was trying to come up with some story about why I needed to make this caramel, but the truth is I felt like making something sweet and delicious without baking anything. I also made a vegan version, and I don’t know which one I like more.

Ingredients

1/3 cup heavy cream

1 cup brown sugar

2 tablespoons granulated sugar

1/4 cup butter

1/3 cup Vanilla Sea Salt Sunbutter

pinch of salt

Instructions

Throw everything but the sunbutter in a saucepot on medium-low, whisking continuously for about four minutes. Take off heat and whisk in sunbutter for an additional minute, (or put back on heat and stir for longer for a thicker consistency). Try not to eat it out of the pot with a spoon.

Vegan Version—Ingredients

1/2 cup pure maple syrup

1/4 cup Vanilla Sea Salt Sunbutter

1/2 teaspoon vanilla extract

Instructions

Throw everything in a pot and cook on medium, whisking continuously. Bring to a boil and continue whisking for another minute until the caramel thickens up. Again, try not to eat straight from the pot!
