Sunbutter Pretzel Bites

Here’s another snack for our Sunbutter and Superheroes series—delicious Ry’s sandwiched between two salty and crunchy pretzels, dipped in chocolate. I can’t think of anything better! This recipe uses oat flour instead of powdered sugar for the sunbutter consistency, but it doesn’t take away from the yumminess on bit. Enjoy!

Ingredients

1/2 cup Vanilla Sea Salt Sunbutter

  • 1 Tbsp honey

  • 1/2 cup + 1 Tbsp oat flour

  • Approx. 48 pretzel twists

  • 1/2 cup chocolate chips

Instructions

Line a medium-sized baking sheet with parchment paper.

In a large mixing bowl, add sunbutter and honey. Stir until well combined.

Pour oat flour into the sunbutter mixture, then stir to combine until the mixture resembles cookie dough.

Scoop about 1 teaspoon sized portion of the sunbutterr mixture onto one pretzel. Take a second pretzel and sandwich it over the sunbutter, repeat until there’s no more mixture.

Melt the chocolate. I did the double boiler method, but the microwave works too. If you’re using the microwave, heat in 30 second increments until chocolate is melted.

Dip the pretzel sandwiches in the chocolate and place on parchment.

Chill for 1 hour.
