No Bake Sun-crispy Treats

To be honest, I’m not sure why I made these. Bored, maybe? I mean, we are in those dog days of summer—I probably just needed a little pick me up. Well, these did the trick! I couldn’t decide if I wanted to do a Vanilla Sea Salt with apricot, or the Cocoa with mango chili, so I did both. And, well, I’ll let you be the judge!

P.S. -- I CANNOT emphasize this enough: grease everything involved before adding ingredients. I used nonstick spray, you can use whatever you’re comfortable with. But for the love of Pete, DO IT

Ingredients

3/4 cup Ry’s Sunbutter either flavor

1/2 cup honey

1/2 tsp vanilla extract (mmm, extra vanilla!)

3 cup crispy rice cereal

1/3 cup dried apricots (if you’re using Vanilla Sea Salt) or chili mangoes (if you’re using Cocoa), diced

Instructions

Put cereal and dried fruit into a bowl

Line a pan with parchment paper

Over medium low heat, combine sunbutter, honey, and vanilla extract

While mixture is still warm, pour into bowl with cereal and fruit and mix well

Pour this mixture into parchment lined pan, and stick into fridge or freezer for 30-40 minutes

Pull out on parchment paper, cut into bars, and enjoy!
